Banana Bread

My children just love this banana bread. They eat it for breakfast (toasted with cream cheese…yummy!) or just for snacks, in their lunches or after a difficult training session!  :)  I have to make at least one banana bread every 2 weeks… I sometimes cut it and freeze it.

1 ¼ cups sugar
½ cup margarine or butter (or apple sauce)
2 eggs
3 to 4 medium ripe bananas, mashed
½ cup milk
1 teaspoon vanilla
2 ½ cups all-purpose flour (I sometimes make it with whole wheat flour)
1 teaspoon baking soda
1 teaspoon salt
1 cup nuts or chocolate chips

Heat oven to 350* .
Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, milk and vanilla. Mix until smooth. Stir in remaining ingredients except nuts just until moistened. Stir in nuts.
Poor into greased pans . (I have used all kinds of pans for this bread. Use whatever is available! Round, square, 8 inches, 9 inches!)
Cook for about 1 hour or until wooden pick inserted in center comes out clean.
Cool 5 minutes.
Store at room temperature for up to 5-6 days or refrigerator up to 10 days.
