Mom’s Buttermilk Griddle Cakes

2 Cups flour
1 Tbsp sugar
1 tsp baking soda
1 tsp salt
2 eggs
2 cups buttermilk.
2 Tbsp vegetable oil
Mix together (may use blender if you add the liquid first – or mix with electric mixer). Pour onto greased hot griddle or waffle-iron. Cook until edges begin to brown. Bubbles will appear on top. Turn over. Cook until golden. Stack cakes – keep warm in a low oven until all are cooked.
