Reba's "Not Chili"

1-2 yellow onions chopped
3 tbl. butter
4-5 (32oz) cans stewed Italian tomatoes
1 c. dry barley
3 c. Chicken broth (may use bullion)
1/4 tsp red chili pepper – crushed (add to taste)
1 tsp cumin seed – ground
1-2 (4oz) can mushrooms (add juice too)
1 1/2 c. fresh salsa (if you must, you can use bottled salsa)
1 bag frozen “California” style frozen vegetables
In a big pan caramelize the onion.
Add the rest of the ingredients
Stew at least 40 mins.
(This is my husbands favorite meal, it is even better the next day)
Serve with bread or rice, and a dollop of sour cream or yogurt.
